In many countries and cultures, vegetables, fruits, beans and grains are the stars of the show, moving meat from the center of the plate to a place on the side or the top. In this hour-long talk with chef and cookbook author Mollie Katzen, consider “Protein As a Condiment” not only for the nutritional and environmental benefits, but for the aesthetic effects as well. Enjoy a light lunch of delicious "food flips" – creatively rearranged, ethnically-influenced dishes where traditional proteins trade places with the other items on the plate, and serve to add a complementing flavor. Discover new recipes, and reduce your personal carbon footprint too!

Farmers' markets present New England produce at its fresh and seasonal best. Join us for this cooking demo and market tour to learn more about New England's fall produce (and artisan producer) bounty and how you can turn it into a delectable and healthy meal. Harvard University Dining Services' chefs will present a light lunch and cooking demo of seasonal produce straight from the market, and Food Literacy Project Coordinator Theresa McCulla will tour you through the market and introduce you to the specialty produce and products currently available.
