Backyard Barbecue, Colonial Style

The Colonists discovered how to barbecue back in the 17th century, as they explored the Caribbean. The local people taught the Colonists to smoke-dry meat on greenwood lattices over a fire. In Spanish the greenwood lattice was called the barbacoa—the word that eventually became "barbecue."
